Late July in our house means it’s time to get ready for our county fair. It’s a busy time, and that requires simple meals.
During the fair, we will end up eating out of the back of our van quite a bit. We do a lot of PB&J sandwiches.
We will also likely eat at the fair at least one meal. (My kids show animals all day long on Monday!)
Not that I’m complaining about eating fair food. Yum!!
Our 2 Week Meal Plan

Breakfast:
- cereal
- bagels
- lemon zucchini bread
- pancakes
- toast
Lunch (with sides of fresh fruit, cheese or yogurt, and one junk food)
- sandwiches (PB&J, Nutella, PB&honey, lunchmeat, apple butter)
- pasta salad
- cut melons and berries
- gogurts and other portable foods
- quesadillas (The kids can make these themselves using our quesadilla maker. Gotta love that!)
- mac & cheese
- grilled cheese
- scrambled eggs
- hot dogs
- leftovers
Supper (with sides of potatoes, pasta salad, chips and/or fresh cut veggies or salad)
- grilled chicken
- lemon and garlic chicken
- hamburgers x 2
- brats & metts x 2
- beer can chicken
- fair food x 2
- crispy parmesan chicken with creamy lemon garlic pasta
- homemade pizza
- tacos
- leftovers
- leftover casserole (using anything I can find in the fridge)
Snacks
- apple crisp (yum! easy enough to make even when life is crazy)
- popcorn
- s’mores
- cookies
- fruit
- crackers with cheese or peanut butter
- chips
That’s what we’ll be eating for the next 2 weeks!

Great meal plan! Love that you sneak in lots of fruit and veggies. Also, those pancakes look great! You have to drive 50 mins to an iHop? 🙁
Yeah, we live in the country. It’s 20 or 30 minutes to most bigger stores. But I love the quiet and farm animals, so it’s mostly worth it. 😉
I’m loving the idea of leftover casserole! We do similar stuff like this. So smart!
I’ve got to do a better job with the meal planning. I’ve been letting Jon take over, which means we ate beans and rice 3 times last week. Good as it is, he cooks way too much for the three of us.

I was doing really well with meal planning but then I got off track. I need to get back into it again…it make life so much easier!
I just did a big shopping trip to prep for the next week and a half. I am a make in BULK and freeze kind of girl!

Sounds like a busy time for you! I love having a plan when things get busy, or I would like to have one all the time but it hasn’t worked out that way lately. Levi’s not home right now and Georgia works most evenings, so Bruce and I have been the left-over eaters. LOL Saves me time on cooking but soon I’m going to have to get back in the swing of things. This will help. Thanks.
I love that you post simple meal plans! This is exactly what I need. Meal planning is always hard for me and if the recipes are too complicated I get overwhelmed. These are perfect. 😉
