These pickle dip roll ups are a quick lunch or appetizer, perfect for days when it’s just too hot to cook.

It will probably come as no surprise that the idea for these Pickle Roll Ups Appetizer recipe came to me when I was pregnant.

(This is coming from the same gal who thought mixing green olives in with mashed potatoes was the ultimate treat. You’re welcome for that idea.)

Well, roll ups aren’t just for pregnant women.  This recipe is perfect for a quick and easy lunch, an appetizer for a party, or a simple snack on a hot day.

Easy Pickle Dip Roll Ups Recipe

These pickle dip roll ups are delicious and make an easy lunch or appetizer!

So easy you barely need a recipe.  But you’ll get one anyway!

Set out 4 oz of cream cheese so it reaches room temperature.  You want it easy to spread!

Cut up your dill pickles until you have about 1/4 cup.

Mix them together along with a teaspoon of dill weed.

Spread on your tortilla. (This should cover up to 3 tortillas depending on how heavy you like to spread them.)

Roll ’em up, cut ’em up, and voila!

Here are some things you could sprinkle over the dip before you roll them (depending on your taste):

  • thinly sliced bell peppers
  • black olives
  • lettuce
  • diced tomatoes
  • crunched up potato chips
  • chiles, diced jalapenos, or banana peppers
  • ranch or Dijon mustard

Ingredients

  • 1/4 c chopped dill pickles
  • 1 tsp dill weed
  • 4 oz cream cheese, softened
  • 3 flour tortillas

Instructions

  1. Place cream cheese into a medium sized bowl and stir (to make sure it's softened).

  2. Add pickles and dill. Stir well.

  3. Spread cream cheese mixture across tortillas.

  4. Roll up tortillas. Slice into pinwheel shape.

  5. Chill one hour before serving. Or eat right away if you can't wait.

Recipe Notes

You can add toppings after you spread your cream cheese mixture, but before rolling. You might like tomatoes, olives, peppers, or potato chips if you have real cravings.
