Easy Oatmeal Breakfast Bar Recipe

Ingredients

  • 3/4 c brown sugar
  • 1/2 c granulated sugar
  • 1 c yogurt (plain or your favorite flavor)
  • 1 large egg
  • 2 Tbsp applesauce
  • 2 Tbsp milk
  • 1 tsp vanilla extract
  • 1 1/2 c all purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 c quick or old fashioned oats
  • 1 c fruit or chocolate chips options: raisins, chopped apples or pears, berries, chocolate chips, smashed banana, etc.

Instructions

  1. Preheat your oven to 350 degrees.

  2. In a large bowl, mix sugars, yogurt, egg, applesauce, milk, and vanilla.

  3. In a smaller bowl (or a 4 cup measuring cup), combine flour, soda, cinnamon, and salt.

  4. Add dry ingredients to wet ingredients and stir until combined.

  5. Mix in oats and fruit.

  6. Pour into ungreased 9x13 casserole dish. Spread to cover.

  7. Bake 30 minutes or until golden brown.

  8. Cool and cut into bars.
