
A quick breakfast casserole that uses a lot of eggs. Put the dish together the night before and bake in the morning for an easy start to your day!
Preheat your oven to 350.
Brown and drain your ground sausage.
Grease a 9x13 casserole dish. Then rip apart your bread slices into small chunks and cover the bottom of the dish.
Cover the bread with your cooked sausage and sprinkle the cheese evenly over the top.
In a bowl, whisk your eggs and the milk together. Add the salt, pepper, and mustard and give it another whisk or two.
Pour your egg mixture over the sausage and cheese.
Bake the casserole for 40 to 45 minutes or until the eggs are cooked through and the casserole is golden brown.
This recipe is super forgiving.
I have used more eggs without changing any other ingredients and it has turned out great.
Use any bread you have on hand. Your preference of mild or spicy sausage, whole milk or skim, etc. You could even switch the meat for ham or other leftover meats in your fridge.
If you assemble the casserole and then refrigerate overnight, you may need to increase the baking time by another 10 minutes or so. Do keep an eye on it so it doesn't burn.
