Looking for a way to use up a lot of eggs in a hurry? This easy Sausage Egg Breakfast Casserole is always a hit in my medium sized family!

Any time I’m staring down an abundance of eggs…whether it’s from a loss leader deal at the grocery store or because one of my kids hit a whiffle ball and discovered a jackpot of hidden eggs from our free range chickens…my second favorite go-to idea is this Sausage Egg Breakfast Casserole.

(Anyone with a sweet tooth will understand that my first idea is always a good Angel Food Cake!)

If you are in search of an easy weeknight recipe that is largely dump and go (ok, I will have to ask you to brown the sausage first…you don’t want a clump of greasy sausage on your fork, do you??), look no further!

Yeah, I said weeknight recipe, because no one in my house has ever complained when I put this dish on the supper table. Breakfast for dinner is a favorite of ours!

Egg and Sausage Breakfast Casserole

A quick breakfast casserole that uses a lot of eggs. Put the dish together the night before and bake in the morning for an easy start to your day!

Ingredients

  • 4 slices bread white or wheat (gluten free works well)
  • 1 lb ground sausage
  • 1 c shredded cheddar cheese
  • 6 large eggs
  • 2 c milk
  • 1 t salt
  • 1/4 t black pepper
  • 1/2 t ground mustard powder

Instructions

  1. Preheat your oven to 350.

  2. Brown and drain your ground sausage.

  3. Grease a 9×13 casserole dish. Then rip apart your bread slices into small chunks and cover the bottom of the dish.

  4. Cover the bread with your cooked sausage and sprinkle the cheese evenly over the top.

  5. In a bowl, whisk your eggs and the milk together. Add the salt, pepper, and mustard and give it another whisk or two.

  6. Pour your egg mixture over the sausage and cheese.

  7. Bake the casserole for 40 to 45 minutes or until the eggs are cooked through and the casserole is golden brown.

Recipe Notes

This recipe is super forgiving. 

I have used more eggs without changing any other ingredients and it has turned out great. 

Use any bread you have on hand.  Your preference of mild or spicy sausage, whole milk or skim, etc.  You could even switch the meat for ham or other leftover meats in your fridge.

If you assemble the casserole and then refrigerate overnight, you may need to increase the baking time by another 10 minutes or so.  Do keep an eye on it so it doesn’t burn.
